Paris is known for many things—romance, art, incredible hair, inexplicably lithe women who would sooner saunter than sprint as a form of exercise—but, until recently, the city of baguettes and brie hasn’t earned much of a reputation as an epicenter of healthful cuisine. Thanks to a few directional chefs and bakers, things are looking greener. For the visiting stylists, editors, and models looking to fit in a gluten-free, vegetable-heavy, or liquefied meal to supplement servings of foie gras and boeuf bourguignon, we asked local cookbook author Jeanne B. (of the recently published Zéro Gluten: La Cuisine de Jeanne B.) for the best restaurants to fill up and nourish in. And though she contests that “there are too many good places,” here, she shares her favorites.

“I really like this place because it’s organic, has very good juices, and a lot of vegetarian and gluten-free options,” says B. of the French-Vietnamese fusion spot in the First Arrondissement. Though the menu features everything from detox salads to bánh mì burgers, she’s likely to order the bo kho. “I love the noodles. I will stay at the restaurant and read there because it’s so cute, or just stop by for a juice to take to the Jardin du Palais-Royal.”

“This just opened in the Third Arrondissement in the Marché des Enfants Rouges, by the owner of Nanashi—one of the best and healthiest restaurants in Paris.” Featuring a daily menu of one soup, one snack, and one special, the vegetarian restaurant is a go-to for grabbing a fresh-pressed juice between shows.

“The entire place is gluten-free. Their menu is succinct, but very, very good,” says B., who regularly visits to pick up fresh-daily bread and pastries. Likening the fish and vegetable-minded dishes to those at New York City’s Dimes, she explains what makes it especially Parisian is its location. “Noglu is very hidden in the Passage des Panoramas, so tourists don’t know it exists.”

“It’s a new, very chic gluten-free boulangerie that just opened in the Eleventh,” says B., who raves about the quality of Chambelland’s rice and buckwheat flours. Those who dine in can order a sandwich, soup, or salad, but the bread is available to go. “The pavé au sucre à la fleur d’oranger is amazing. And their fougasse with green olives is incredible.”

If you’re looking for “really good coffee,” KB Cafeshop is the place, says B. who stays at the artists’ hangout “for hours” ordering any number of juices, teas, and bites to eat. “They make every salad, cake, and scone there daily, and it’s all healthy. Plus it’s in my favorite quartier, Pigalle, near the Hotel Amour and the new Café Kitsuné.”

This sun-soaked restaurant was recently opened in an old train station and boasts a seasonal menu replete with rotating gluten-free, vegan, and vegetarian options. “It’s great for a drink, but the food is very good. Summer or winter, it’s a nice place to be.”
