The perfect summer drink should be several things. Icy cold, obviously. Fruity, maybe, but definitely not too sweet. And—as evidenced by the ubiquity of the season’s spritzes and rosé—also aesthetically appealing.
It needn’t be alcoholic—or on the flip side—healthy, necessarily. But blessed is the rare libation that somehow manages to possess both those attributes.
Below, one contender that fulfills all of the above criteria quite naturally: The Unicow, a limited-edition cocktail now available at both Manhattan locations of Quality Eats. Made of vodka, St-Germain, and pineapple juice, its flavor is both floral and tropical. And, thanks to the addition of a large, brightly striped ice cube layered with spirulina, pitaya, camu camu, and goji berry–infused blue and pink lemonades from the Pressed Juicery—created in honor of Vogue’s 125th anniversary—it is as pretty to look at as it is virtuous to drink.

Ingredients
1.5 oz. vodka
.5 oz. St-Germain elderflower liqueur
.5 oz. Lillet Blanc
.5 oz. pineapple juice
.5 oz. lemon juice
Instructions
- Shake in a cocktail shaker.
- Strain into a rocks glass over a Pressed Juicery striped lemonade cube.
Instructions
In a 2-inch ice-cube mold, add 1 oz. Pressed Juicery pink lemonade.
Put in freezer until frozen solid (about 2 hours).
Add 1 oz. Pressed Juicery blue lemonade.
Put in freezer until frozen solid. Alternate blue and pink layers until mold is filled.
